CHARACTERISTICS: It is a set of smooth or curly leaves arranged in rosette that arise from a more or less branched stem, about 15 cm. long. Its dark green and shiny leaves can vary in size, depending on the variety. Its flavor is something acidic, but pleasant to the palate.

CULINARY USES: It can be consumed fresh, cooked or fried. Raw salads are very common, taking advantage of all the properties and riches that this plant offers. They are also usually added in tortillas, vegetable stews, creams or purees, as well as as an ingredient in fish dishes. Currently, it is one of the vegetables that is most commonly frozen.
