CHARACTERISTICS: It was used by the first civilizations of the humanity, and at the moment it is cultivated in almost all the world. It is an annual plant that does not reach the meter in height, it blooms in the summer months, with large yellow umbels in which its seeds rich in essential oils are housed.
CULINARY USES: Dill is a basic ingredient in many countries, indispensable in the kitchens of the Nordic and Baltic countries, especially for the preparation of pickles (in which the seeds are included) and fish. It combines perfectly with salmon, both in the elaboration of stews of this or other fish, as in the marinated salmon or the Scandinavian specialty known as gravlax.
